Sweet Potato Fries

I adapted my oven fry recipe and used sweet potatoes to add a new side dish we liked a lot.
Sweet Potato Fries
2 -3 medium sweet potatoes
2 tablespoons canola oil, divided
½ - ¾ teaspoon seasoned salt or garlic salt
1 teaspoon thyme
1 teaspoon oregano
Pepper to taste
First. Preheat oven to 425 degrees. Lightly oil a large baking sheet with about 1 tablespoon oil.
Second. Slice sweet potatoes about ¼-inch thick. Then slice them length-wise into long, skinny french-fry shapes. Or use a mandolin to cut them. Put sliced sweet potatoes into a large plastic food bag. (The bag does not have to be a recloasable bag. I even use the flimsy bags from the produce section if they are free of holes.)
Third. Combine salts and herbs in a small cup. You may experiment with the seasonings you prefer and add more salt, pepper or spice to suit your tastes like rosemary, paprika, chili powder, garlic powder. Be creative.
Fourth. Pour 1 tablespoon of oil over the bagged sweet potatoes. Twist the bag closed and shake to coat sweet potatoes with oil. Open the bag and sprinkle seasonings over the sweet potatoes. Retwist the bag and shake to coat.
Fifth. Pour sweet potatoes onto baking sheet. Arrange in one layer evenly over the pan. Bake for 12-15 minutes. Turn fries over to the other side. Bake an additional 12-15 minutes until brown and as crispy as you like. Serve.

Are those actual sweet potatoes or yams because around here, everyone calls yams sweet potatoes and the produce guy looks at me funny when I try to tell him there is a difference.
Anyway, I think I will try the recipe with all the yams I have.
